| Oswaldo Acevedo is a fourth-generation Colombian coffee grower. In 1995, Acevedo transformed his family’s coffee farm from conventional to organic production. Acevedo has also been a presenter for the Specialty Coffee Association of America (SCAA), speaking on the topic of restoring habitat through eco-friendly coffee farming. Café Mesa de los Santos was certified organic in 1998. The coffee also boasts the coveted “Certified Shade-grown, Bird-friendly®” seal, awarded by the Smithsonian Migratory Bird Center. Café Mesa de los Santos produces and exports the highest quality organic coffee in Colombia, and receives the highest price paid for organic coffee in the U.S. due to its unequalled quality and consistency. Acevedo, along with his team of dedicated workers, is constantly improving the cup quality of the coffee he grows. Much of the coffee’s quality (and sweetness) may be attributed to the farm’s location. Mesa de los Santos occupies a rare spot atop a plateau that rises above Chicamocha Canyon. The daily fluctuations in temperature that occur in this location are considered very desirable among wine producers because they result in a sweeter product. Acevedo believes this is a main contributor to the consistently sweet cup quality of the coffee that is produced by Mesa de los Santos. The farm is currently working with blending different varietals to further improve cup quality and is innovating mucilage removal techniques. Coffee Fest Seattle will be held October 24-26, 2003 at the Washington State Convention and Trade Center. For more information on Coffee Fest Seattle, please visit www.coffeefest.com. Café Mesa de los Santos invites interested specialty coffee professionals and bird enthusiasts to visit the 180-year-old hacienda, where a team of horses is ready to transport guests through guided tours, immersing visitors in the creation of “café de sabor divino” (coffee of divine taste) and highlighting the natural beauty of the farm and its wild residents.
